LAKE MARTIN SAUSAGE

All you have to do is go get a Boston Butt hand it to the meat guy and say “grind this”.  I’ve made these recipes into smaller versions so you can try it (I bought an 8lb butt last time, mixed a bunch of different ones and froze them).

 

INGREDIENTS

  • 1 lb medium ground boston butt

  • 1 tsp salt

  • ½ tsp black pepper

  • ¼ tsp marjoram

  • ½ tsp basil

  • ¼ tsp thyme

  • 1 pressed clove of garlic (or two)

  • 1/4 cup cold water

DIRECTIONS

Mix all ingredients in a bowl, I let it sit in the fridge overnight to get the flavor in the meat.  Form patties by hand just like you would little bitty hamburgers.  This sausage takes a little longer because it is going to be thicker than what you buy in the store.
