GOLDEN FISH FILLETS

INGREDIENTS
1 Egg
2 tb Prepared mustard, your fav..
1/2 ts Salt
Instant potato flakes to coat, I use the herb ones.
1 1/2 lb - 2 lbs white fleshed fish-fillets (sole, flounder,
-perch, orange roughy)Release spray...
DIRECTIONS
Lightly beat together the egg, mustard, and salt in a shallow dish.
Put the potato flakes and herbs in another shallow dish.
Dip the fish fillets in the egg mixture; Roll in potato flakes to
coat. Spray a baking/broiling rack with non-stick spray.
Bake at 325 to 350 F. for 12 to 15 minutes for average size fillets.
or until the coating is a deep tan (for thinner pieces of fish).
or until it is golden brown and flakes easily with a fork
HINTS
Season the egg mixture with some hot sauce..or chili powder.
Season the potato mixture with any dry herb... like tarragon, dill,
thyme, or chervil. Or cilantro, - baked garlic..
